Chicken Saltimboca

This has quickly become our favorite easy chicken recipe; only about 30 minutes of work. Thanks ATK.

Lesson learned today: never deglaze a pan with 1 – 1/4 cups of wine.  Use only about 1/2 cup until you scrape up the browned bits, then add the rest later. Otherwise there’s not enough bubbling action to properly remove the fond from the bottom of the pan.

Recipe Rating: 5-star. One of my favorites.
Cost: $5. 3-lbs of chicken. Proscuitto di Parma was only $10/lb.
How much work? Low
How big of a mess?  Low.
Start time 5:30pm. Dinner time 6:30pm. Including 15 minutes of pre-freezing chicken.
